Last year I made my very own Easter Egg cheesecake for the first time. Had I known how easy they were to make I would have made them myself long long ago as I personally think they taste much better than a shop bought one.
When Easter arrived last year my social media accounts were full of people making Easter Egg cheesecakes so I thought why not give it a try myself with some of the Easter eggs that we had leftover (they had been sat in the cupboard for a month or so and they weren’t being eaten anytime soon – oh how the times have changed when I was younger my siblings and I would’ve had them all gone long before this point).

The recipe
If you’d like to make your own Easter Egg cheesecake here is my recipe. It’s easy to follow and the great thing is you can personalise them to your own tastes. You can decorate your eggs by adding different sweets or by drizzling chocolate or sauce on them the possibilities are endless. They’re a great thing to make with the kids too.

Easy Easter Egg Cheesecake
Ingredients
Method
- Unwrap the Easter Egg and place it on a large dinner plate or tray. If you buy Cadbury Easter Eggs they are already split in half so save a lot of mess and hassle trying to split the egg.
- Crush the biscuits into crumbs – place the biscuits into a small bag and break them up using a wooden spoon or rolling pin. You don't want any big bits but be careful not to split the bag or the biscuit crumbs will go everywhere. Alternatively, you can use a blender.
- Melt the butter in a small pan over a low heat, when melted stir in the biscuit crumbs. Spoon half of the mixture into each of the chocolate egg shells.
- Using a hand mixer, whisk the cream until it forms soft peaks. Beat in the cheese and then stir in the icing sugar – do this carefully as the icing sugar will go everywhere if you are too rough.
- Spoon the mixture into the chocolate shells and put in the fridge to set – allow at least 2 – 3 hours for this.
- Decorate your eggs as you wish. I used whole and crushed Mini Eggs and a Mini Malteaster Bunny on one egg and Milk Chocolate Buttons and a Mini Bunny on the other.
