Chocolate Orange Mini Eggs are one of my favourite chocolate sweets. I honestly think that it’s a shame that they are only available for a short period of time. I do however stock up so that I have plenty to last me a little while.
Cookies are a great treat

The recipe
If you’re like me and you love these little orange eggs of chocolate goodness you are going to love my recipe to make Chocolate Orange Mini Egg Cookies.
You don’t have to use the Orange eggs you could use normal mini eggs too if you wanted. I used Terry Chocolate Orange Eggs in this recipe as they are my favourites but I think you could also use Smartie Mini Eggs or the Original Mini Eggs too.

Ingredients
Method
- Mix the butter and sugar together using an electric whisk or by hand until very light and fluffy
- Beat in the egg and vanilla essence
- Fold in the flour, baking powder, salt and mini eggs as quickly as possible and only until all the mixture is evenly mixed or else you will overwork the dough.
- Leave overnight if possible if not cover the bowl and chill in the fridge for as long as possible. you can roll into balls at this stage if you want
- Preheat your oven to 180°C / 160°C fan and line two baking trays with baking parchment
- Divide the mixture up into balls or place your ready rolled balls on to the paper leaving enough space for the cookies to spread as they cook
- Bake for 8 – 12 minutes depending on your oven – they should be a little brown on the edges but soft in the middle.
- Leave to cool on the tray for a few minutes before transferring them to a wire rack to completely cool
- Enjoy them on their own, with a glass of milk, or slightly warmed with ice cream
